The secret to this salad it to find fresh, sweet Brussels sprouts. It good the next day too, if you have any left over.

2 tablespoons extra-virgin olive oil
2 tablespoon walnut oil
1 tablespoon lemon juice
1 teaspoon sherry vinegar
1 tablespoon finely chopped parsley
Salt and freshly ground black pepper, to taste
Salad
1 quart Brussels sprouts, shaved thinly with a benriner or a mandolin
1 cup sliced almonds toasted
1/2 cup parsley
1 cup shaved parmesan cheese *
1. Put the mustard in a small bowl. Slowly add olive oil and walnut oil while whisking. Add the lemon juice and sherry vinegar. Finish with the chopped parsley and season with salt and pepper.
2. To prepare the salad, toss Brussels sprouts, almonds, and parsley in a salad bowl with some of the vinaigrette adding as much as you like. It shouldn’t be swimming in the dressing. Top with the shaved parmesan.
